Our Favourite Pasta Recipe

This pasta recipe is simple, quick, and easily adapted to what you have in the fridge. These days I make it almost every week as it is among Birdy’s favorite foods. What is it with toddlers that makes any food that contains pasta and tomatoes an instant hit?

You will need:

  • Pasta of your choice
  • 1 can of tomatoes
  • 1 onion
  • 1 garlic clove
  • One or two veggie(s) of your choice: carrot, celery, paprika, zucchini, etc.
  • Some olive oil for frying
  • Sea salt & black pepper
  • Parmesan cheese

Instructions:

Fill a pot with water, bring it to boil, and cook the pasta. My favorite types are Fusilli and Gemelli as it’s super easy for the little one to eat and plenty of sauce is caught between the “corkscrews”.

Meanwhile, pour some olive oil in a frying pan and set over medium heat. Chop the onion as small as you can, press the garlic clove and throw it in the pan. Cut or grate the veggies of your choice and add in the pan. Be careful not to add too many vegetables as the sauce will end up too thick.

Sautee the vegetables until soft, then pour over the canned tomatoes and cook for 5-10 minutes. I personally don’t see much difference in quality between canned chopped and whole tomatoes but there’s one thing I pay attention to. The list of ingredients on the can should contain just one word – tomatoes. So many products have added tomato juice, salt, citric acid etc. which are completely unnecessary.

If you wish, use a hand blender to make the sauce extra smooth.

Add some sea salt, black pepper, and/or any spices of your choice. Serve with freshly grated Parmesan and, if you wish, a side of salad.Pasta recipe with homemade tomato sauce
